America's Test Kitchen
This side provides a wealth of recipes, videos, product reviews - and most particularly - the science behind the food preparation and cooking techniques used in their kitchens. And many of the recipe videos explain the importance of using certain techniques, such as baking soda as a meat tenderizer. One section of the site is devoted to this science. Although access to all of the content is fee-based, quite a bit of the content is available upon free registration. |
